Bites On The Run – Chicken Jollof Wrap!

Serves: 4


  • 4 Medium Flour Tortillas
  • For The Chicken;
  • 1 Piece of Chicken Breast
  • 2 Tbsps Olive Oil
  • 3 Cloves of Garlic Minced
  • 1 Tbsp Cayenne Pepper
  • 1 Tbsp Cumin
  • 1 Tbsp Black Pepper
  • 1 Tbsp Rosemary Powder
  • 1 Tbsp Paprika
  • 1 Tbsp Salt
  • For The Filling;
  • Jollof Rice
  • 1 Bundle of Lettuce (Sliced)
  • 1 Medium Onion
  • Mayonnaise


  1. Pour olive oil into a mixing bowl, add garlic, cayenne pepper, cumin, black pepper, rosemary powder, paprika, salt and soy sauce.
  2. Stir and set aside.
  3. Slice the chicken into layers and add to the marinade.
  4. Stir to coat evenly, cover with cling film and set in the fridge for 30 minutes.
  5. Heat olive oil in a skillet over medium heat and pan grill the chicken for 3 minutes on each side.
  6. Slice and set aside.
  7. Heat the tortillas in a pan over medium heat for a minute on each side.
  8. Scoop spoonful of jollof on the tortillas, add lettuce, onion and chicken slices.
  9. Drizzle with mayonnaise and roll up.
  10. Jollof tortillas ready.
  11. Cut into two and serve.
